The Lazy Girl's Banoffee Pie



So when the two girls called e get together for a baking day it's safe to say that one of us (infalliably me) will be running late. It's also safe to say that we'll be a little disorganised, forget to read the recipe and need to take a shortcut or improvise in some way or another.
We were faced with two issues for our Banoffee Pie adventure...
1. We didn't have a food processor, nor the patience required to make shortcrust pastry.
2. We didn't have the required three hours to boil up our condensed milk into the luscious dulce de leche.
So what's a girl to do? Create the Lazy Girl's Banoffee Pie of course!

What you need
12 x mini short crust pastry cases (found in the freezer section)
1 x 395g can of condensed milk
50g of butter
1/3 cup of PACKED brown sugar
1 x banana
1 x flake crushed
whipped cream to serve

1. Go buy your ingredients... and take the list!
2. Pop your pastry cases in the oven and cook according to the pack! (Ours said 10 mins on 180 degrees)
3. Place the condensed milk, brown sugar and butter in a saucepan on a low heat (we can't stress low enough... high produces weird brown bits... oops!)
3. Keep stirring (with a wooden spoon) for 12-15 minutes until the caramel thickens
4. Now comes the fun bit! Spoon the caramel mixture into the pastry cases until they are full (we'll leave you to judge just how full!)
5. Pop the pies into the fridge to cool for roughly an hour, in which time you can wile away the time reading A Girl Called E!
6. Pull your cases out of the fridge and slice your banana thinly. Place three slices of banana on top of the caramel
7. Top the pies with whipped cream and sprinkle with flake
8. Dig in before friends, family and co. can steal the rest of your bounty.

Best eaten the day of cooking (for so many reasons... mainly because you won't be able to stop at one) but keep them in the fridge. And eat all the leftover caramel your body will allow!

  2. ooh no, i haven't tried them! but now they are definitely on my list. that and the ice-cream place where you got the banana bread ice-cream!
