Lots of kisses...

I have just finished baking some Meringue Kisses. The first batch failed dismally (a little yolk got in the egg whites), but I'm quite pleased with these ones. On top of looking cute, they also taste delicious, and unless you run into problems with the egg whites, then they are really easy to make.

2 egg whites
Pinch of Salt
1/2 Cup Caster Sugar
Pink Food Colouring (to marble through the meringue)

Beat the egg whites and salt. Gradually add caster sugar, beating well until the sugar disolves and the mixture is thick and glossy. Spoon the mixture onto a tray lined with baking paper to make 24 little rounds and then run a skewer dipped in red food colouring the the rounds to create the marble effect. Pop into a 120/100 degree oven and bake for an hour.


Filling: You can either use chocolate icing (butter, icing sugar and cocoa) or I also used store bought lemon curd.
Simply sandwich the lemon curd or choclate icing between two kisses and voila!

    Thailand was beautiful and so relaxing! I did so much shopping too I thought my luggage was over the limit! Have you been to Thailand before?

    I'm so glad you had a great trip, I'm mondo jealous! I haven't been to Thailand but ohh I want to. Is the shopping good? I'm guessing so!
